The lone difference in the stamped signatures is the extension on the 's' in Roosevelt.
How is this possible?
Stamps aren't without flaws and for someone who was so involved as she was, she would have had numerous stamps...probably at the same time as different secretaries would handle different mail.

Couldnt there also be a difference in pressure applied with the stamp?

For sure. In one of the examples, you can see uniform, heavier ink at the top.
