2010 Topps 2020. They are very common and not worth anything, but they are one of the coolest inserts in recent years.

The "Gallery of Stars"(?) from Topps Gallery featured the current players on a painted version of the early 50s sets and looked great...

That reminds me, there were some Topps Gallery inserts with a stained glass background. I thought those were pretty cool. And I do like those 2020 cards as well. There's also a recent lenticular Topps Opening Day insert similar to those.
I kind of liked the stadium club ring leaders cards out of 95 or 96. Very appealing in person. First thing that popped in my head as not a paralel.

Cards look alot alot better in person, this one didn't scan well. Its not really rare by any means, but I've always though they were very eye appealing. I may just like shiny stuff, this is very reflective and shiny in hand

As a kid, I absolutely lived and died by getting Topps Black Gold cards from the packs at the vending machines at the Giant.
Them, and later, I forget what set they were and what they were called, but a 2000 Fleer card that had a suede feel and mock ball stitches. Loved those.
A bunch. For non-parallels, my top picks include:
1990-1993 UD Heroes 10-card sets. I always wished they had continued them without screwing them up with serial numbering and junk.
1994 SP Holoview Reds (and blues)
1997 Donruss Signature Significant Signatures and Notable Nicknames
2005 UD Classics Fantasy Team
2010 Upper Deck Exquisites
Loads of others, but these come to mind first.
