The Alomar patch is from the 2001 American League 100th anniversary patch. The white part is probably from the baseball logo on the patch.

05 Absolute Memorabilia Team Tandems Swatch Single #TT-90 [#/50]

05 Absolute Memorabilia Team Tandems Swatch Single Spectrum Prime Black #TT-90 [#/150]

Which one is this:

It's numbered out of 150, so I assume it's "Single Spectrum Prime Black. Are there versions with an Olerud patch as well? Do the Swatch Single variations have just one jersey piece in them?

It really depends on the card and the players. Some are all prime, some are not. There is most likely not one with an Olerud patch.

Pretty sure you have that correct. Spectrum means the card has that foil design on the front. And "single swatch" means one swatch per player. Here's what a double swatch looks like:
