We get all manner and variety of cheeses at the local produce markets.

Hey MTers from Chicago ... Any really good cheese shops there?

Eric, if you want the best cheese in the world, it isn't in Chicago without being made in Wisconsin. Just tell me what you want and I'll get it to you.

What I'd love is to have some aged cheddar, at least 10 years old. Cant find any around my area. I also love five year old aged Gouda

Love extra sharp cheddar, but I've had some that was expensive and terribly dry and bitter...almost crumbly.

Also love bleu, gorgonzola, gruyerre, parmesan, asiago, provelle...

...did I mention I like cheese?

Very nice! See, I like the dry and crumbly lol
Since I don't eat much, I like the harder cheeses that you mentioned.
The cheddar I've been going on about goes for in the are of $25lb

Im always up for trying new natural cheeses, but again prefer the firm ones
