Maybe a sortable spread sheet would be fine. Can do by team and other things to help sort the names.

I would make a sortable spreadsheet like Nate said, or even make it in alphabetical order, that way if someone is looking for a certain player they can just scroll to that players last name. If you do scan them all in, on photobucket you can tag each picture and then those tags will be on the left side of the page, then people can just look through those tags for the player or team they're looking for.

I did a sortable spreadsheet on Google, so it's always live for people to view :

I also started scanning and putting them into my bucket, and used tags. Each card has a tag for their NFL team, type of card (Rookie Year, insert, game used, etc), college team they played for, and their name if they're a star player. Just to take it a step further, I organized a section on my site to allow easier browsing of that based on those tags.

I know that personally I much prefer a photobucket over a list. You can organize your photobucket by team and player as well. It might take a bit longer but I think its certainly a better way. I think if you make a list make sure its a pretty detailed list. Maybe by team, then by player and then by year.
