If I were to donate cards to Goodwill, would it be best to make a checklist of every card to donate through a "My Collection" list from Beckett? That way I have a list of every card and BV of the collection as a whole. Could I write off the total value of the cards on my taxes when they ask about any donations.

I wouldn't donate to Goodwill as they will just resell them. Why not find a local shelter for women and children, homeless shelter that is child friendly.. That way the cards are given to kids who could enjoy them, At a point in life where things are bad. Bet those cards no matter the vaule, Will be very well valued and enjoyed..
