Bobby Kielty - That man had quite the arm. I remember being at a game where he fielded one of the baggy and fired in into the infield. It was a tough play.
Doug Mientkiewicz - I know he's "well-known" for catching the final out in the 2004 World Series, but man that dude was a great first basemen. He used to do the splits at first to catch balls that were wild throws.
Jordan Smith (Indians) - He's a minor leaguer. He's not from California or Florida, so naturally nobody really cares about him, but his fielding skills are nuts. I watched him slide all over the outfield in a wood bat league a couple years ago. From what I saw, his bat wasn't THAT great, but I loved watching him play defensively.
